Method
 

Preparation
  1. Preheat the oven to 350°F.
  2. Grease and flour a 9-inch by 5-inch baking pan, then set it aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a separate bowl, whisk the mashed avocado, sugar, vegetable oil, milk, eggs, and vanilla extract until the mixture is smooth.
Cooking
  1. Gradually add the dry ingredient mixture to the avocado mixture, stirring until just combined.
  2. Fold in the chopped pecans to incorporate texture and flavor.
  3. Pour the batter into the prepared baking pan, smoothing the top.
  4. Place in the oven and bake for 50 to 60 minutes, or until a toothpick inserted in the center comes out clean.
Serving
  1. Allow the bread to cool in the pan for 10 minutes.
  2. Transfer to a wire rack to cool completely before slicing.
