Preparation
- Prepare the muffin tray by lightly coating a metal tray with ghee or coconut oil if not using silicone.
- Preheat the oven to 350 degrees F.
- Place oats in a food processor and pulse until mostly finely chopped.
- Incorporate raw pistachios and pecans/walnuts, then pulse until minced.
- Mix in pitted dates, apricots, and cranberries, pulsing until combined.
Cooking
- Add cooked quinoa, chia seeds, sesame seeds, honey, and melted ghee, then pulse until sticky and well combined.
- Divide the mixture evenly into the mini muffin tray, pressing it firmly into each cavity.
- Bake for 12-15 minutes or until the edges turn golden brown.
Serving
- Allow the bites to cool on a rack before serving.
- Store in a sealed container in the refrigerator for up to a week or freeze for two months.
Notes
Experiment with different nuts and dried fruits, add more sweeteners if desired, and let the mixture rest to hold together better when baked.
