  • 2 pieces chicken breasts Provides lean protein

Method
 

Preparation
  1. Cook chicken breasts until fully cooked, approximately 20 minutes at 350°F (175°C).
  2. Slice the cooked chicken into thin strips.
  3. In a mixing bowl, combine salad greens, sliced bell peppers, grated carrots, and chopped green onions.
Dressing
  1. In a separate bowl, whisk together peanut butter, soy sauce, sesame oil, lime juice, and honey until smooth.
Assembly
  1. Toss the salad ingredients with the peanut dressing until well coated.
  2. Add the sliced chicken on top before serving.
  3. Garnish with additional green onions and sesame seeds if desired.

Notes

For added flavor, marinate the chicken in soy sauce and ginger before cooking. Chill the salad before serving to let flavors develop.
