For the Chicken
  • 2 lbs boneless skinless chicken breasts or thighs The base protein that absorbs the marinade flavors.

Method
 

Preparation
  1. Combine soy sauce, honey, rice vinegar, brown sugar, sesame oil, minced garlic, minced ginger, and Kosher salt in a mixing bowl. Whisk until well blended.
Marinating
  1. Place the chicken into a plastic zip bag, pour the marinade over it, and seal tightly. Massage the marinade into the chicken.
  2. Refrigerate for at least 30 minutes to up to 4 hours.
Cooking
  1. Preheat the grill to medium-high temperature (375°F to 400°F).
  2. Remove chicken from the marinade, letting excess drip off. Place on the grill and cook for about 6-7 minutes per side or until internal temperature reaches 165°F.
  3. Optional: Reserve some marinade before adding chicken, bring it to a boil in a saucepan to create a sauce.
Garnishing
  1. Sprinkle grilled chicken with toasted sesame seeds and chopped green onions before serving.

Notes

Use fresh garlic and ginger for better flavor. Marinate longer for deeper flavor penetration, but avoid going beyond 12 hours. Oil grill grates before cooking to prevent sticking. Serve with a drizzle of sesame oil for an elegant touch.
