Method
 

Preparation
  1. Set a large pot of salted water to boil.
  2. Cook pasta until al dente according to package directions.
  3. While the pasta is cooking, melt olive oil and butter in a large nonstick pan over medium high heat.
  4. Add onion; sauté for about 3 minutes until soft and translucent.
  5. Stir in garlic and cook for 30 seconds until fragrant.
  6. Add in the tomatoes (with their juices) and artichokes; gently stir to combine.
  7. Add in the salt, pepper, and nutmeg.
  8. Let simmer for 5 minutes.
  9. Reduce heat to low and add in the cream and broth.
  10. Stir in the Parmesan.
  11. Warm through.
  12. Taste and adjust seasoning, if necessary.
  13. Drain the pasta and add to the sauce; mix thoroughly.
  14. Sprinkle with parsley, toss, and serve hot.

Notes

To enhance your Artichoke Pasta, consider using high-quality olive oil for sautéing and reserving some pasta water to add to the sauce if needed. For variations, try adding different herbs, extra cheese, or a protein like chicken or shrimp.
