- In a large bowl, combine the cabbage, chickpeas, apple, green onion, celery, pepitas, cranberries (if using), and parsley.
Seasoning
- Season with salt and pepper, to taste.
Dressing
- Make the tahini dressing and pour it over the slaw.
Serving
- Use tongs to toss until the slaw is evenly coated with the dressing.
- Squeeze a little fresh lemon juice over the top and enjoy.
Storage
- Store leftovers in an airtight container in the fridge for up to 2 days.
Notes
For added flavor, let the slaw sit for about 10 minutes after mixing so that the flavors deepen. When storing leftovers, note that the cabbage may soften, so it’s best consumed within two days.
