Method
 

Preparation
  1. In the bowl of a food processor, add the flour, sugar, and salt; pulse to combine.
  2. Cut the cold butter into pieces and add to the food processor; pulse until the largest pieces are the size of pebbles. Transfer to a bowl.
  3. Add cold water and apple cider vinegar; mix until a round of dough forms.
  4. Form the dough into disks, wrap in plastic, and refrigerate for 2 hours.
Cooking
  1. Preheat oven to 400°F. Peel, core, and slice apples. Cook half in apple juice for 8-10 minutes.
  2. In a bowl, whisk together sugar, cornstarch, spices, and salt; add uncooked apples, lemon juice, and cooked apples. Mix well.
  3. Roll out one disk of dough and fit into a pie plate.
  4. Spoon apple filling into the pie. Roll out the second disk, score slits, and place on top. Crimp edges.
  5. Brush with egg wash and sprinkle with sugar.
  6. Bake for 20 minutes at 400°F, then reduce to 350°F for 45-50 minutes until golden brown.
Serving
  1. Let cool for at least 3 hours before serving with vanilla ice cream.

Notes

Ensure ingredients are cold for a flaky crust. Let the pie cool completely to set the filling before slicing. You can add raisins or cranberries for a different flavor, and serve with various ice cream flavors.
