Preparation
- Preheat the oven to 400°F (200°C).
- Line the muffin pan with paper muffin cups or spray with nonstick cooking spray.
- In a small bowl, combine the crumb topping ingredients (flour, sugars, cinnamon, and melted butter). Mix with a fork until crumbly. Chill until ready to use.
- In a large bowl, whisk together the dry ingredients (flour, sugars, baking soda, baking powder, salt, and allspice).
- In another bowl, combine the wet ingredients (melted butter, buttermilk, eggs, and vanilla) and whisk well.
Combine and Bake
- Pour the liquid mixture over the dry ingredients and gently stir until just combined.
- Gently fold in the diced apples.
- Divide the batter evenly among the muffin cups and sprinkle with the chilled crumb topping.
- Bake for 18 to 20 minutes, or until the muffins are golden and set.
Serving
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and do not overmix the batter. Store in an airtight container in the refrigerator for 3 to 5 days or freeze for longer storage.
