Preparation
- Preheat your oven to 350°F (175°C).
- Prepare the graham cracker crust by mixing crushed graham crackers with melted butter and pressing into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar, mixing well.
- Add eggs, one at a time, mixing on low speed to avoid overbeating.
- Fold in diced apples and cinnamon until well combined.
- Pour the cheesecake mixture over the prepared crust.
Baking
- Bake for 45-50 minutes, or until the edges are set, and the center slightly jiggles.
- Allow to cool completely, then refrigerate for at least 4 hours before serving.
