Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. Prepare an 8 by 4 loaf pan by spraying it with cooking spray.
  3. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, all spice, and cloves. Set aside.
  4. In the bowl of a stand mixer, add the eggs and beat on medium speed for about 30 seconds.
  5. Add in the canola oil, applesauce, and vanilla, then mix until smooth.
  6. Add the granulated sugar and mix until well combined.
Cooking
  1. Slowly add in the flour mixture and mix until the flour is barely combined.
  2. Gently fold in the chopped apple chunks.
  3. Pour the batter into the prepared loaf pan.
  4. In a small bowl, mix together the brown sugar, sugar, and cinnamon for the topping.
  5. Sprinkle the mixture over the batter in the loaf pan.
  6. Bake for 50-55 minutes, or until the loaf is golden and a toothpick comes out clean.
Serving
  1. Cool the bread in the pan for 10 minutes.
  2. Loosen the sides and remove the bread from the pan.
  3. Allow the bread to cool completely on a wire rack before slicing.

Notes

Store in an airtight container at room temperature for up to four days. Freezes well for up to three months. Reheat at 350°F for about 10 minutes.
