Ingredients
  

Pasta and Vegetables
  • 8 ounces elbow pasta Cooked al dente
  • 1 cup celery, diced Adds fresh crunch

Dressing Ingredients

Method
 

Preparation
  1. Boil the pasta. Bring a large pot of salted water to a rolling boil and add the uncooked elbow pasta. Cook according to the package instructions until al dente.
  2. Drain and cool. Drain the cooked pasta in a colander and set aside to cool.
Combine Ingredients
  1. In a large bowl, add the cooled pasta, diced celery, diced sweet onion, diced red bell pepper, and diced hard boiled eggs.
Mix Dressing
  1. In a small bowl, combine Miracle Whip, granulated sugar, sour cream, yellow mustard, apple cider vinegar, sweet pickle relish, celery seed, salt, and ground black pepper.
Combine Salad
  1. Pour the Miracle Whip mixture over the pasta and vegetables in the large bowl, then toss until everything is evenly coated.
Chill
  1. Cover the salad and chill in the refrigerator for at least 1 hour before serving to enhance the flavors.

Notes

For added flavor, consider using roasted red peppers instead of fresh. You can mix in some bacon bits for a savory twist or let the salad sit overnight for deeper flavor infusion.
