Method
 

Preparation
  1. Use paper towels to remove excess moisture from the fruit.
  2. Reserve some mandarin oranges, cherries, coconut flakes, and nuts for decoration.
  3. In a large bowl, gently combine the salad ingredients using a silicone spatula.
  4. Move the mixture to a serving dish and top with reserved fruit, coconut flakes, and nuts.
  5. Serve immediately or refrigerate until ready to serve.
  6. For additional flavor, you can toast the coconut flakes.
  7. If desired, substitute yogurt with a mixture of sour cream and vanilla extract.
  8. Garnish with fresh mint if using.
  9. Store in an airtight container in the refrigerator for up to 3 days.
