Preparation
- Prepare the marinade by mixing soy sauce, honey, ginger, garlic, and lime juice in a bowl.
- Add chicken breasts to the marinade, making sure they are thoroughly coated.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours for fuller flavor.
Cooking
- Preheat your grill to medium heat, around 350°F (175°C).
- While the grill is heating, slice the pineapple into rings.
- Remove chicken from marinade and discard the remaining marinade.
- Place the chicken and pineapple on the grill, cooking for 6-7 minutes per side.
- Check the chicken with a thermometer; it should reach 165°F (75°C).
- Once cooked, remove from grill and let rest for a few minutes.
- Serve the chicken topped with grilled pineapple slices.
Notes
Consider marinating the chicken overnight for a deeper flavor profile. Use fresh pineapple for the best taste and texture. For added flavor, consider adding chili powder or crushed red pepper to the marinade.
