Preparation
  1. Prepare the marinade by mixing soy sauce, honey, ginger, garlic, and lime juice in a bowl.
  2. Add chicken breasts to the marinade, making sure they are thoroughly coated.
  3. Cover and refrigerate for at least 30 minutes, or up to 2 hours for fuller flavor.
Cooking
  1. Preheat your grill to medium heat, around 350°F (175°C).
  2. While the grill is heating, slice the pineapple into rings.
  3. Remove chicken from marinade and discard the remaining marinade.
  4. Place the chicken and pineapple on the grill, cooking for 6-7 minutes per side.
  5. Check the chicken with a thermometer; it should reach 165°F (75°C).
  6. Once cooked, remove from grill and let rest for a few minutes.
  7. Serve the chicken topped with grilled pineapple slices.

Notes

Consider marinating the chicken overnight for a deeper flavor profile. Use fresh pineapple for the best taste and texture. For added flavor, consider adding chili powder or crushed red pepper to the marinade.
