Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine crushed chocolate cookies with melted butter until fully incorporated.
- Press the mixture into the bottom of a greased baking dish to form the crust.
- Bake the crust for 10 minutes, then remove from the oven and let cool.
Cheesecake Filling
- In another bowl, beat the cream cheese and sugar until smooth.
- Add vanilla extract, shredded coconut, and chopped almonds, mixing until fully combined.
- Spread the cheesecake mixture over the cooled crust evenly.
- Bake for an additional 20-25 minutes until the center is set but slightly jiggly.
- Remove from the oven and allow to cool completely.
Topping
- Melt chocolate chips and spread over the top of the cooled cheesecake.
- Chill in the refrigerator for at least 2 hours before slicing into bars.
