Ingredients
  

For the Salmon
  • 1 lb salmon, fresh fish cut into cubes Main protein source.
  • 1 tsp kosher salt Enhances flavors and seasons the salmon.
  • 1/2 tsp pepper Adds seasoning depth.
  • 1 tbsp sesame oil Adds nuttiness and flavor.
For the Bowls
  • 1 cup cooked rice Base for the bowls.
  • 1 medium cucumber, sliced Fresh vegetable for crunch.
  • 1 medium carrot, sliced Adds natural sweetness and color.
  • 1 medium avocado, sliced Creamy texture and healthy fats.
  • 1 cup snap peas Sweet and crunchy vegetable complement.
  • 2 tbsp scallions, chopped Adds brightness and garnish.
  • 1 tbsp Furaki or sesame seeds For garnish and additional crunch.
For the Spicy Mayo Sauce
  • 1/2 cup light mayo Base for the creamy sauce.
  • 1-2 tbsp sriracha Provides spice and heat.
  • 1 tbsp low sodium soy sauce Adds umami flavor.
  • 1 clove garlic, minced Aromatic seasoning for depth.
  • 1 tsp ginger, grated Adds freshness and flavor.

Method
 

Preparation
  1. Remove skin from the salmon and cut into 1-inch cubes. Place into a medium bowl and season with salt, pepper, and sesame oil. Toss to coat.
  2. Slice cucumber and carrot into ribbons or shreds. Slice the avocado and set everything aside.
  3. Combine all sauce ingredients (light mayo, sriracha, soy sauce, garlic, ginger) in a small bowl and set aside.
Cooking
  1. Preheat the air fryer to 400°F (200°C) and spray with cooking spray or olive oil.
  2. Arrange seasoned salmon in a single layer in the air fryer basket.
  3. Air fry the salmon for 7 minutes, checking halfway through for doneness. Ensure it flakes easily with a fork when done.
Assembly
  1. Place cooked rice in individual bowls, then top with air-fried salmon and the prepared vegetables.
  2. Drizzle with spicy mayo sauce and add desired toppings like scallions and Furaki. Enjoy!

Notes

For best texture, ensure the salmon is fresh and avoid overcrowding the air fryer. You can marinate the salmon in soy sauce and garlic beforehand for extra flavor.
