- Remove skin from the salmon and cut into 1-inch cubes. Place into a medium bowl and season with salt, pepper, and sesame oil. Toss to coat.
- Slice cucumber and carrot into ribbons or shreds. Slice the avocado and set everything aside.
- Combine all sauce ingredients (light mayo, sriracha, soy sauce, garlic, ginger) in a small bowl and set aside.
Cooking
- Preheat the air fryer to 400°F (200°C) and spray with cooking spray or olive oil.
- Arrange seasoned salmon in a single layer in the air fryer basket.
- Air fry the salmon for 7 minutes, checking halfway through for doneness. Ensure it flakes easily with a fork when done.
Assembly
- Place cooked rice in individual bowls, then top with air-fried salmon and the prepared vegetables.
- Drizzle with spicy mayo sauce and add desired toppings like scallions and Furaki. Enjoy!
