Preparation
  1. Make the marinade by whisking together olive oil, apple cider vinegar, and Dijon mustard in a small bowl and set aside.
  2. In a separate small bowl, blend salt, pepper, garlic powder, and Italian seasoning.
  3. Pour the marinade over chicken breasts and liberally rub the seasoning on both sides.
Cooking
  1. Preheat the air fryer to 375 degrees F if required.
  2. Add chicken breasts to the air fryer and cook for 18-22 minutes, flipping once halfway, until fully cooked.
Serving
  1. Check doneness with a meat thermometer; ensure the chicken reaches an internal temperature of 165 degrees F.
  2. Remove chicken from the air fryer and let rest for 5-10 minutes before slicing.
  3. Serve immediately or let cool, packaging in storage containers for later use.

Notes

For best results, marinate the chicken for at least 30 minutes or overnight for deeper flavor. Pat the chicken dry before marinating to help the seasoning stick better. Don't overcrowd the air fryer basket. For extra crisp, give the chicken a light spray of cooking oil just before air frying.
