- Heat olive oil in a large pot over medium heat.
- Add chopped carrots and celery; sauté until tender, about 5 minutes.
- Stir in diced chicken breast and cook until browned, about 5-7 minutes.
- Add chicken broth and sun-dried tomatoes, then bring to a simmer.
- Mix in fresh herbs and lemon juice; simmer for another 10 minutes.
- Taste and season with salt and pepper as needed.
- Remove from heat and let cool slightly before serving.
Notes
Opt to add a splash of white wine during sautéing for extra flavor. Use rotisserie chicken for even quicker prep.
