Preparation
- Rinse the bok choy thoroughly and then cut it in half lengthwise, ensuring the core is clean.
- Heat the avocado oil in a large 12-inch lidded skillet over medium-high heat.
Cooking
- Add the minced garlic to the skillet and cook while stirring for about 30 seconds, until fragrant.
- Place the bok choy in a single layer cut side down in the skillet. Drizzle it with soy sauce and rice vinegar.
- Cover the pan and cook until the core is fork-tender, about 3-5 minutes. If the bottom of the pan becomes too dry, add a tablespoon or two of water.
- Remove the pan from heat, arrange the bok choy on a serving platter, drizzle with pan juices and sesame oil, and sprinkle with red pepper flakes. Serve immediately.
Notes
For best results, consider adding a splash of citrus juice or mixing in some chopped ginger for extra flavor. Adjust the spice level with red pepper flakes per your preference.
